Apricot Delight has long been one of my favourite snacks, all sweet and apricotty - but the stuff from the shops tends to be chocka block full of preservatives and chemicals. So when I came across this brilliant recipe I got pretty excited about giving it a go.
It's super healthy, super delicious and super easy. Enjoy!

Ingredients:
250g dried apricots, chopped
3/4 cup boiling water
2 tbsp honey (or agave for the vegans out there)
1 1/2 cups dessicated coconut
extra coconut, for coating
Directions:
- Chuck all the apricots in a blender, only for 5 seconds or so, they should be chopped into little pieces.
- Put half the apricots, boiling water and honey in a small saucepan and soak for an hour.
- Once well soaked, bring the apricot mixture to the boil and simmer for ten minutes.
- Put apricot mixture back into the blender and blend until smooth.
- Pour blended apricots, rest of apricots and coconut into a bowl and mix, you should have a thick paste.
- Spread mixinto a lined 15cm cake tin and line top with greaseproof paper to keep it sticky, refridgerate overnight.
- Chop into small squares and toss in coconut to coat.
- Gobble them all up!
